Slakkentempo
Ondanks dat ik ongeveer 70% van het voedsel niet eens tot me kan nemen, kijk ik toch vaak graag naar het elke dag nog uitgezonden kookprogramma Ready Steady Cook. Het behoort tot mijn favoriete televisieprogramma’s; ik keek al naar ‘ready steady’ op de BBC lang voordat het op de Nederlandse tv te zien was. Voor Kinderjournaal.nl interviewden we in 2006 presentator Ainsley Harriot al voordat hij bij het grote Nederlandse publiek bekend was. (interview met Ainsley; let vooral op het dansje van Ainsley met de presentatrice aan het eind van het interview :-)))
Elke dag worden er hier op tv nog herhalingen uitgezonden, maar zodra de meest recente afleveringen weer op de BBC zijn, kijk ik daar het liefst naar.
Waarom vind ik Ready Steady nou zo leuk? Simpelweg omdat het voedsel zo appetijtelijk in beeld wordt gebracht, vergeleken met vele andere kookprogramma’s. De in een krappe twintig minuten gemaakte gerechtjes zijn erg kleurrijk, creatief en zien er zo smakelijk uit dat het kwijl bijna je mond uitloopt. De Engelse koks, die meewerken aan de kookshow, maken zeer gevarieerd eten klaar. Sommige van hen hebben een Michelinster en ze koken regelmatig voor beroemde mensen. Het is altijd weer een verrassing wat de kijker voorgeschoteld krijgt en het is nooit hetzelfde. Dat in tegenstelling tot de Italiaanse variant van het succesvolle kookprogramma. ‘La prova del cuoco’, zoals de spaghettieliefhebbers het hebben genoemd, wordt alweer zo’n elf jaar elke dag vanaf 12 uur, anderhalf uur lang, (meestal) live uitgezonden. Daar kennen ze sinds jaar en dag het welbekende fenomeen ‘pasta’ en wat betreft de Italianen zal dit in lengte van dagen zo blijven. Er is namelijk erg weinig variatie in de gerechten te bespeuren in het land van de pizza, pasta, de Fiat500, de Vespa en de espresso.
Ondanks dat de Engelsen vroeger bekend stonden als saaie eters c.q. verschrikkelijke koks, hebben ze zich in de loop der decennia tot volwaardige culinaire toppers ontwikkeld. Diverse fusiongerechten passeren de revue en worden er in korte tijd tot soms zes borden bereid. De Italianen, van oorsprong een langzaam en sloom volk, redt dit aantal bij lange na niet en de kijker moet het dan ook vaak doen met één zielig bordje prut met pasta.
In Italië zal het nog wel een tijd duren totdat ze overstappen op wat kleurrijker voedsel. Meestal beperkt de kookkunst van Prova del cuoco zich tot het eenvoudigweg koken van een standaardgroente zoals broccoli of een artisjok. Dit wordt dan vervolgens stijlloos op het Italiaanse designbordje gekwakt, in plaats van culinair hoogwaardig gestyled. Om daaroverheen een kwak, in mijn ogen smurrie, in diverse onaantrekkelijke kleuren te ‘gooien’. Daarbij dan weer een klein hoopje pasta met parmezaanse kaas erover geraspt. Afgemaakt met een garnering van wat slap uitziende mintblaadjes, waarvan niemand weet wat het nut daarvan is.
Italië staat ook absoluut nog in de kinderschoenen wat betreft belegde broodjes. In het dagelijkse programma krijgt de moderne Italiaan wekelijks een échte ‘broodjes-met-beleg-les’. De creatiefloze Italianen gaan dan helemaal uit hun dak met dé Fonz (Happy Days) uit Italië. Hij leert de conservatieve kijkers hoe je een doormidden gesneden broodje kunt beleggen met wat olijfolie, mozzarellakaas, salami en allerhande ander hartig beleg wat er in de winkel te vinden is. Dat moet een hele openbaring zijn voor de normaal gesproken ‘alleen-met-een-croissant-en-cappuccino-ontbijters’.
De Italiaanse koks hebben het er maar druk mee vergeleken met hun Engelse collega’s. Waar de Italiaan één simpel bordje met veel poeha in elkaar flanst; zet Engeland vijf, zes bordjes neer met heerlijk creatieve en gevarieerde makkelijke gerechtjes. Het zou daarom dan ook niet verkeerd zijn om het slakkentempo van de gemiddelde Italiaan eens flink op te voeren.
Het anderhalf uur durende programma, gepresenteerd door de koningin van het middaguur Antonella Clerici, heeft ook iets positiefs. Het is wel een heel gezellig programma waarbij veel kennis wordt gedeeld over voedsel en eten in het algemeen. Waar de gemiddelde Nederlander zich bijna nooit mee bezig houdt, wordt op de Italiaanse televisie in geuren en kleuren uitgelegd. En dan doel ik met name over uitleg van gezonde voeding voor je lichaam en bovenal voedselallergiën, die steeds vaker voorkomen, maar waar in Nederland nauwelijks aandacht aan wordt besteed. En het alternatief bereiden van grootmoedersmiddeltjes tegen allerhande kwaaltjes, wat reuze interessant en werkzaam kan zijn, is een onderdeel van de Italiaanse eetcultuur, wat op een inspirerende wijze in dit programma wordt uitgelegd.
Al met al heeft ieder programma dus zijn eigen charme en blijft het altijd toch weer een kunst om in het kort tijdsbestek van twintig minuten, heerlijke gerechten neer te zetten, in welk land je ook woont.
